Veggies are a big part of a healthy diet that's why THM says to fill your plate with non starchy veggies. This is also why I try to add veggies into every meal that can be hard with E breakfasts sometimes, so I came up with this Carrot Cake Oatmeal recipe, it includes a whole carrot and tastes delicious. Egg whites are added for additional protein as well as making it creamy so no need to add additional liquid when eating.
Ingredients
1 ¼ cups water
1 medium carrot grated
½ cup old fashioned oats
1 tsp Cinnamon
Dash of Nutmeg
½ tsp maple extract
1-2 doonks Stevia (more if you like it sweet)
⅓ cup Egg whites
To make
Bring water and carrot to a boil
Add oats, cinnamon, nutmeg, maple extract, and stevia
Cook till oats are done about 5-7 minutes stir often
Add Egg whites cook for 2 minutes stirring the whole time
Enjoy
I enjoy my carrot cake oatmeal with a cup of coffee with collagen and MTC oil in it so I do not add any fat to my oatmeal, if you would like you can add 1 teaspoon of butter or coconut oil to yours to get the allowed amount of fat in a E meal.
